Grilled Chicken Noodle Salad

Ingredients:
2 chicken breasts
250g hokkien egg noodles
1 long red chilli (seeded and julienned)
1 carrot (julienned)
1 courgette (julienned)
1 small handful of mint leaves
1 small handful of of coriander

Marinade:
1 tablespoon of grated ginger
1 tablespoon of fine caster sugar
3 tablespoons of oyster sauce
3 tablespoons of rice wine/dry sherry
1 tablespoon vegetable oil
2 garlic cloves (finely chopped)

Dressing:
2 tablespoons light soy sauce
1/2(0.5)teaspoon sesame oil
1 tablespoon malt vinegar
1 tablespoon of fine caster sugar
2 tablespoons lime juice

Optional to serve:
1 tablespoon of sesame seeds

Method.
Combine marinade ingredients in a large bowl, add the chicken and veg, leave for 4 hours or overnight if possible.
Mix the dressing ingredients and stir until sugar has dissolved.
Pour hot water over the noodles to soften, then drain well. Refresh under cold water then drain again.
Cook chicken and veg on medium heat until cooked through. Remove from the pan and rest in a warm place for 5 minutes, then slice.
Combine noodles, chilli, mint and coriander. Add enough dressing to coat all ingredients.
Pile noodles onto a bowl and top with chicken and a sprinkle of sesame seeds.

Slow Cooker Lasagne

Ingredients:
1 kg of lean mince (turkey, pork or beef)
1 large onion, diced
2 large carrots, diced
1 bell pepper, diced
200g mushrooms, sliced
500g passata
400g chopped tomatoes
150-200g fresh lasagne sheets
Handful of basil leaves
As much chopped garlic as you like

Low calorie white sauce:
500ml semi skimmed milk
35g cornflour

Method.

Brown mince in a pan with a little oil. Add in all other ingredients except lasagne sheets.
Layer lasagne mix with pasta sheets until mix has all been used.
Mix a little milk in to the cornflour to make a paste. Heat remaining milk in a saucepan, do not let it boil. While stirring the milk continuously slowly add in the cornflour and milk paste until it thickens.
Pour over the top of lasagne in pot.

Cover pot with lid and cook on low for 8 hours.
If you want to you could add some grated cheese for the last 30 minutes of cooking time.

Spicy Steak Strips

Ingredients

3 oz. beef strips
½ tsp. paprika
½ tsp. red pepper flakes
¼ c. green bell pepper
1 oz. red onion
2 tbsp. sour cream
1 lime wedge
¼ c. yellow bell pepper
1 tbsp. butter
¼ avocado

Method.
Slice steak, onions and bell peppers into strips.
Heat butter in frying pan or griddle, add in paprika and steak
Cook until steak is browned, then add in the onion and peppers.
Once hot remove from heat and place on a plate, top with avocado slices, sour cream and a sprinkle of chili flakes.

Turkey Burgers

Ingredients:
Brioche rolls
150-200g per person Lean turkey mince
1-2 Spring onions
1tsp Fish sauce
Zero cal cooking spray.

Method.
Slice spring onions as fine as possible, add turkey mince and fish sauce.
Mix together by hand and make burger patties.
Fry in a pan (until cooked through) with zero cal spray
Serve in brioche roll with side salad (or chips, but thats a LOT of food).

You can add garlic mayo.
As an alternative, leave out the fish sauce and add crispy bacon and cheese.
