Banana Bread

Ingredients
- 3 over ripe bananas the browner the skin, the better the result
- 75 g butter melted
- 175 g light brown sugar
- 1 tsp cinnamon
- .5 tsp nutmeg
- 1 tsp baking soda
- 1 pinch of salt
- 190 g flour
- 1 egg beaten
- 1 tsp vanilla extract
Instructions
- Mash bananas and add in melted butter, mix together in a bowl
- Add in light brown sugar, the egg and vanilla extract
- Mix gently
- Sprinkle cinnamon, nutmeg, baking soda and salt over the top, then mix gently
- Add flour and mix through
- Pour into a buttered loaf tin and bake for 50 mins to an hour at 175C
