Jerk recipe

  • 2 tbsp paprika
  • 2 tbsp cayenne pepper
  • 2 garlic cloves chopped
  • 1 tsp thyme
  • 1 tsp parsley
  • .5 tsp cinamon
  • .5 tsp turmeric
  • .5 tsp all spice
  • .25 tsp nutmeg
  • 1 cm ginger chopped
  • 2 tbsp vegetable oil
  • 1 bell pepper sliced or chopped
  • 100 g pineapple chunks
  • 100 g mango chunks

rind from orange, lemon and lime

    good pinch of salt and pepper

      500g of tofu/meat of your choice


        • Mix all ingredients together in a bowl
        • Add 500g of your favourite meat
        • Mix in 2 tbsp of sunflower oil
        • Leave to marinade for as long as possible (minimum of 30mins)
        • Add ingredients to a non-stick pan, once browned add
        • 1 chopped bell pepper, 100g mango chunks, 100g pineapple chunks
        • Continue cooking until meat is cooked through
        • Serve with rice
