Jerk recipe
A beautiful picture for beautiful flavours, for the moment the picture is as close as I'm going to get to actual Jamaica!

Ingredients
- 2 tbsp paprika
- 2 tbsp cayenne pepper
- 2 garlic cloves chopped
- 1 tsp thyme
- 1 tsp parsley
- .5 tsp cinamon
- .5 tsp turmeric
- .5 tsp all spice
- .25 tsp nutmeg
- 1 cm ginger chopped
- 2 tbsp vegetable oil
- 1 bell pepper sliced or chopped
- 100 g pineapple chunks
- 100 g mango chunks
rind from orange, lemon and lime
good pinch of salt and pepper
500g of tofu/meat of your choice
Instructions
- Mix all ingredients together in a bowl
- Add 500g of your favourite meat
- Mix in 2 tbsp of sunflower oil
- Leave to marinade for as long as possible (minimum of 30mins)
- Add ingredients to a non-stick pan, once browned add
- 1 chopped bell pepper, 100g mango chunks, 100g pineapple chunks
- Continue cooking until meat is cooked through
- Serve with rice
