Coddle
The weather has been rubbish. So we made this over the weekend, it’s not 100% traditional; but delicious all the same.approx 460 calories per serving, 45g carbs, 36g protein and 14g fat)

Ingredients
- 500 g carrots peeled and sliced
- 1 kg potatoes peeled
- 1 large white onion diced as small as possible
- 10 smoked bacon rashers
- 20 chicken sausages we used "Heck" chipolatas
Instructions
- Peel and slice carrots, place them in a large pot
- Peel potatoes and add them to the pot too, leave them whole
- Chop onion as small as possible and add to carrots and potatoes
- Cut bacon rashers into thirds and add to the pot
- Make sure sausages are not linked, add these to the pot
- Making sure that the ingredients are level, fill the pot with water until it nearly covers everything
- Bring to the boil, remove the pot lid and simmer gently for around 90min
