Chicken and Bacon
Another versatile dish that's great for meal prep

Ingredients
- 650 g chicken breast diced
- 300 g smoked bacon cut
- 325 g baby plum tomatoes chopped
- 1 bell pepper chopped
- 1 courgette diced
- 400 g tin chopped tomatoes
- 2 garlic cloves chopped or crushed
- 10 large basil leaves chopped or ripped
Instructions
- Finely chop garlic and add to pan
- Chop bell pepper, courgette and baby tomatoes, set aside
- Chop/rip basil leaves, set those aside too
- Turn pan on with garlic, with a pair of scissors cut bacon into pan, followed by the chicken breast
- Cook on med-high heat until chicken has browned
- Add in tin of chopped tomatoes and all other ingredients except the basil. Simmer for 10 mins
- Add the basil, stir in and cover pan with lids for 5 mins on a low heat
- Serve with pasta or boiled baby potatoes
