Chicken and Bacon

  • 650 g chicken breast diced
  • 300 g smoked bacon cut
  • 325 g baby plum tomatoes chopped
  • 1 bell pepper chopped
  • 1 courgette diced
  • 400 g tin chopped tomatoes
  • 2 garlic cloves chopped or crushed
  • 10 large basil leaves chopped or ripped


  • Finely chop garlic and add to pan
  • Chop bell pepper, courgette and baby tomatoes, set aside
  • Chop/rip basil leaves, set those aside too
  • Turn pan on with garlic, with a pair of scissors cut bacon into pan, followed by the chicken breast
  • Cook on med-high heat until chicken has browned
  • Add in tin of chopped tomatoes and all other ingredients except the basil. Simmer for 10 mins
  • Add the basil, stir in and cover pan with lids for 5 mins on a low heat
  • Serve with pasta or boiled baby potatoes
