- 500 g mince beef, pork, turkey all work well
- 1 onion chopped
- 1 can kidney beans
- 2 cans chopped tomatoes
- 2 garlic cloves chopped or crushed
- 200 g mushrooms chopped
- 2 tsp ground cumin
- 2 tsp smoked paprika
- 1 tsp hot chilli powder add more to make it hotter!
Brown mince and break up with a wooden spoon
Add garlic and onion, cook on medium heat until onions are soft
Add tomatoes, beans and spices, mix well
Add remaining ingredients and simmer on low for 10 minutes
Eat one portion with rice
Eat one portion with tacos
Use another portion and combine with cooked rice. Then fill sliced bell peppers, top with cheese and bake @180/gm7 for 15-20 minutes (ensure contents is hot before serving)
