Mango Chicken Curry
Meal prep is by far the easiest way to free up time during a hectic week.
This recipe is great to do in a slow cooker, so you can spend 20 minutes prepping this, 8 hours later this is ready.

- 200 g pure creamed coconut
- 850 g mango pulp
- 2 kg chicken breast diced
- 200 g onion diced
- 350 g sweet potato peeled and cut in to chunks
- 2 cups chicken stock
- 50 g mild curry powder
Handful of coriander leaves to use before serving
Sliced red chillies if you like it spicy.
Add everything to the slow cooker apart from the chicken
Quickly brown chicken in a frying pan, then add to the remaining ingredients in the slow cooker.
Give it a good stir, put the lid on and set temp to low.
Leave it to cook on low for 8 hours, enjoy the day.
Stir before serving.
Serve with basmati rice or naan bread.
Don’t forget to sprinkle the coriander and chilli slices on top.
