Banana Bread

Ingredients

  • 3 over ripe bananas the browner the skin, the better the result
  • 75 g butter melted
  • 175 g light brown sugar
  • 1 tsp cinnamon
  • .5 tsp nutmeg
  • 1 tsp baking soda
  • 1 pinch of salt
  • 190 g flour
  • 1 egg beaten
  • 1 tsp vanilla extract

Instructions

  • Mash bananas and add in melted butter, mix together in a bowl
  • Add in light brown sugar, the egg and vanilla extract
  • Mix gently
  • Sprinkle cinnamon, nutmeg, baking soda and salt over the top, then mix gently
  • Add flour and mix through
  • Pour into a buttered loaf tin and bake for 50 mins to an hour at 175C

Try not to eat directly from the tin
