Coddle

The weather has been rubbish. So we made this over the weekend, it’s not 100% traditional; but delicious all the same.

Ingredients

  • 500 g carrots peeled and sliced
  • 1 kg potatoes peeled
  • 1 large white onion diced as small as possible
  • 10 smoked bacon rashers
  • 20 chicken sausages we used "Heck" chipolatas

Instructions

  • Peel and slice carrots, place them in a large pot
  • Peel potatoes and add them to the pot too, leave them whole
  • Chop onion as small as possible and add to carrots and potatoes
  • Cut bacon rashers into thirds and add to the pot
  • Make sure sausages are not linked, add these to the pot
  • Making sure that the ingredients are level, fill the pot with water until it nearly covers everything
  • Bring to the boil, remove the pot lid and simmer gently for around 90min
