Vegetable Soup 3.5l slow cooker recipe

Loads of soup. Great meal prep obviously; and really healthy

Ingredients

  • 30 g butter
  • 1.25 kg mixed vegetables
  • 30 g cornflour
  • 1.1 lt vegetable stock

Handful of fresh mixed herbs

Generous pinch of salt and pepper

Instructions

  • Wash and cube/slice all vegetables
  • Melt butter in a pan and gently fry the vegetables for 2-3 mins
  • Add the stock and bring to the boil, season with salt and pepper, add the mixed herbs
  • Transfer all to the slow cooker and cover with lid.
  • Cook for 6-8 hours.
  • Add the flour, blend to desired consistency.
