Vegetable Soup 3.5l slow cooker recipe
Loads of soup. Great meal prep obviously; and really healthy
Servings: 12 people

Ingredients
- 30 g butter
- 1.25 kg mixed vegetables
- 30 g cornflour
- 1.1 lt vegetable stock
Handful of fresh mixed herbs
Generous pinch of salt and pepper
Instructions
- Wash and cube/slice all vegetables
- Melt butter in a pan and gently fry the vegetables for 2-3 mins
- Add the stock and bring to the boil, season with salt and pepper, add the mixed herbs
- Transfer all to the slow cooker and cover with lid.
- Cook for 6-8 hours.
- Add the flour, blend to desired consistency.
