Minestrone Soup 3.5l slow cooker recipe

Ingredients
- 30 g butter
- 60 g streaky bacon chopped
- 1 large onion chopped
- 2 garlic cloves crushed
- 300 g potatoes peeled and cubed
- 2 large carrots peeled and cubed
- 3 cabbage leaves shredded
- 3 large tomatoes chopped
- 1.25 lt chicken stock
- 2 tbsp tomato puree
- 2 tsp Worcestershire sauce
- 2 tbsp parsley chopped
- 75 g pasta shells
- 3 tbsp parmesan cheese grated
salt and pepper
Instructions
- Melt the butter and fry the bacon and vegetables in a pan until soft.
- Transfer to the slow cooker and add the stock.
- Add remaining ingredients except the pasta, parsley and parmesan. Stir well.
- Add remaining ingredients except the pasta, parsley and parmesan. Stir well.
- Cover slow cooker with lid and cook for 7 hours.
- Add the pasta shells and parsley and cook for further 45min.
- Season with salt and pepper, before serving sprinkle with parmesan.
