Mango Chicken Curry

This recipe is great to do in a slow cooker, so you can spend 20 minutes prepping this, 8 hours later this is ready.

Ingredients
- 200 g pure creamed coconut
- 850 g mango pulp
- 2 kg chicken breast diced
- 200 g onion diced
- 350 g sweet potato peeled and cut in to chunks
- 2 cups chicken stock
- 50 g mild curry powder
Handful of coriander leaves to use before serving
Sliced red chillies if you like it spicy.
Instructions
- Add everything to the slow cooker apart from the chicken
- Quickly brown chicken in a frying pan, then add to the remaining ingredients in the slow cooker.
- Give it a good stir, put the lid on and set temp to low.
- Leave it to cook on low for 8 hours, enjoy the day.
- Stir before serving.
- Serve with basmati rice or naan bread.
- Don’t forget to sprinkle the coriander and chilli slices on top.
