Mango Chicken Curry

Meal prep is by far the easiest way to free up time during a hectic week.
This recipe is great to do in a slow cooker, so you can spend 20 minutes prepping this, 8 hours later this is ready.

Ingredients

  • 200 g pure creamed coconut
  • 850 g mango pulp
  • 2 kg chicken breast diced
  • 200 g onion diced
  • 350 g sweet potato peeled and cut in to chunks
  • 2 cups chicken stock
  • 50 g mild curry powder

Handful of coriander leaves to use before serving

Sliced red chillies if you like it spicy.

Instructions

  • Add everything to the slow cooker apart from the chicken
  • Quickly brown chicken in a frying pan, then add to the remaining ingredients in the slow cooker.
  • Give it a good stir, put the lid on and set temp to low.
  • Leave it to cook on low for 8 hours, enjoy the day.
  • Stir before serving.
  • Serve with basmati rice or naan bread.
  • Don’t forget to sprinkle the coriander and chilli slices on top.
